It’s no secret that bubble tea is extremely popular these days. There are boba shops worldwide and almost all of them are seeing amazing success. For boba shops to continue to grow and stay competitive, all boba shops worldwide continuously craft new and innovative recipes to WOW their customers.

One of the most recent drink discoveries that have been brought to light is a simple drink called brown sugar milk tea. It’s even been made into a popular boba ice cream bar. Side note, has anyone tried this brown sugar milk tea ice cream bar?

This particular flavor has been making a lot of noise in the boba world and has garnered A LOT of attention. If you don’t live under a rock, then you’ve probably seen it before. It looks like this.

This drink with it’s beautiful and delicious looking “tiger stripes” is what gets most people curious to try it. Actually, at the Talk Boba headquarters, we didn’t just want to try the drink… we wanted to create our own version of it! 

So enough talking, let’s get into making some amazing brown sugar milk tea recipe or tiger milk tea.

How to Make Brown Sugar Milk Tea

Step 1

Before we even start this recipe to make some tiger milk tea or brown sugar milk tea recipe, we highly recommend you start to make the boba pearls for this drink as soon as possible. We actually wrote a comprehensive guide on how to do this in another blog post, so read that here and come back once that’s done! All ingredients for the boba pearls or tapioca pearls are in that article too. 

Step 2

Great, now that you have some delicious pearls whipped up, set those aside and let’s get started on making our brown sugar milk tea recipe or pearl milk tea! 

The first step is creating a super thick brown sugar syrup for milk tea that will be used to sweeten the drink and line the inner cup of the drink to give it the “tiger stripe” look. This is also part of the reason why another name for brown sugar milk tea is tiger milk tea. 

No need to ask how do you make brown sugar. Here’s exactly how to make brown sugar syrup from scratch, read closely. Take 1 cup of water and 1 cup of the muscovado sugar, bring to a boil, then a simmer, and stir occasionally until this mixture has a nice and thick consistency. Once it has achieved the right texture, set it aside and let it cool down.

If you’ve ever made caramel from scratch then you know what consistency to look for. It’s very similar. 

Step 3

Now, take 1 and 1/2 cups of water and bring it to a boil. Once the water comes to a boil, let it sit for 2 minutes and then add the tea bags or loose tea leaves into the water. We love to use loose black tea leaves like these so that the aromatic notes and depth of flavors are present. Sometimes using already made black tea bags do not get the best flavors out of them. Let the tea steep for 10-15 minutes (yes, this is over steeping but it provides a full body of flavor and the bitterness will be cut down with a creamer later on). Once the tea has steeped for 10-15 minutes, remove the tea bags or tea leaves and let the tea cool down completely (put it in the fridge after reaching room temperature). 

Step 4

Now that the tea is completely cooled, get your cocktail shaker and fill it with the tea, add 1/2 cups of the creamer right after, and an ice cube. Although we’ve mentioned we’re using whole milk for this, you can use any other creamer that you prefer as well. Oat milk works really well with this too. Afterwards, simply shake well! 

Step 5

It’s time to finally assemble your cup so we can add the tea to it! 

Grab your favorite boba glass and put in as much boba as you like into it. Then take a spoon and the syrup mixture we made in step 2, and line the inside of the cup with the sugar syrup. We found that using a long spoon or ladle similar to this one from OXO works best. Add as much syrup as you like! 

Lastly,  just fill it up with the tea you just shook up and you’re on your way to enjoying some delicious brown sugar milk tea!
